All the signs of a fresh and versatile wine this Premier Cru Blanc de Blancs. The first impression on the nose is of flint, star anise and breadcrumbs with hints of lemon and fresh hazelnuts. During that the wine breathes we discover notes of licorice peach and grapefruit with lemon zest, cashew nuts, blackcurrant buds and the scent of acacia and roses.On the palate there is an immediate sense of smoothness and freshness with a soft, creamy effervescence, followed by a round fruitiness supported by a tight acidity of lemon peel.
In the world of organic wines you come across all types, from almost other-worldly people, making murky almost undrinkable wines, to super sharp, internationally minded professionals producing outrageously beautiful wines. To the latter category belongs Pascal Collotte, once co-founder of the renowned wine barrel company Saury. In 2002, he bought an expired estate near St. Emilion. He set to work energetically, organically from day one, and brought vineyard and cellar completely back in order. In 2010, he said a final goodbye to his barrel business to devote himself entirely to wine production. The estate has over 12 hectares of vineyard, 6 of which are located on a plateau, the rest on the beautiful green rolling hillsides. When tasting the wines of Château Jean Faux, the great (taste) concentration stands out. This is achieved during and after fermentation, by pumping the grape juice from the bottom of the fermentation vat or tank over the superimposed grape mass. This "remontage" is performed up to three times daily. This creates a wine with great concentration, but also with beautifully absorbed tannins. Every year, 40 to 50% of the barrels are renewed. Barrels are initially refilled weekly because a new barrel sucks up as much as 6 liters of wine (!) later that thirst decreases less frequent refills are made. A barrel full to the brim also requires less (protective) SO2, and that is entirely in keeping with this craftsman's vision. The less sulfur the better. Jean Faux is a "little one" compared to many other Bordeaux Châteaux with a yield of about 60,000 bottles.
